Pillsbury Sugar Free cake mix (in yellow or chocolate)
- Use butter instead of oil 
- Use whole milk instead of water 
- Mix and bake as directed. 
- Level the cakes, then use a sugar-free jam (from the jam aisle-- there are several brands and flavors) on top of each of them, leaving a 1" border. 
- Whip a pint of cream with a little sugar (so it is lightly sweetened). If you slow whip the cream (it will take awhile on lowest speed, a stand mixer makes this easiest) it will be stable for several days. 
- Place one cake layer, jam-side-up, on the cake board. Pipe whipped cream around the border then also on top of the jam, completely covering the cake. Stack on the second cake, jam-side-up, and pipe whipped cream around the border and cover all of the jam.
